I generally make soup all year round, but I go big in the winter because then my family craves it as well. This healthy and Herby Chicken & Vegetable Soup recipe is the best chicken soup recipe I’ve ever made or had since it is loaded with delicious herbs and nourishing bone broth!

Herby Chicken & Vegetable Soup
Ingredients
- 6 medium carrots diced
- 6 large celery stalks diced
- 5 cloves of garlic minced
- 1 medium onion diced
- 1.5 lbs boneless, skinless chicken breast diced
- 2 Tbs. Italian seasoning
- 1/4 tsp. thyme
- 2 tsp. dried rosemary
- 8 cups chicken bone broth
- 1 tsp. sea salt
- water to cover if needed
Instructions
- Place all ingredients into a slow cooker on high for 3-4 hours.
- Shred chicken with two forks.
- Serve warm & enjoy!
