Breakfast Egg Casserole

Ingredients
  

  • 8 organic eggs
  • 1/2 cup water
  • 1/2 red pepper diced
  • 2 green onions chopped
  • 6 cherry tomatoes sliced
  • 1/2 cup spinach chopped
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. oregano
  • pinch sea salt
  • coconut oil for greasing the pan
  • hot sauce and avocado to garnish

Method
 

  1. Preheat the oven to 350 degrees.
  2. Grease a 9X3 casserole dish with coconut oil.
  3. In a medium sized bowl, whisk the eggs and water together.
  4. Next add in the peppers, green onions, cherry tomatoes, spinach, red pepper flakes, oregano, and salt.
  5. Bake in the oven for approximately 30 minutes.
  6. Remove from the oven and serve with hot sauce, avocado and ghee.
