Chaga Mushroom Soup

Ingredients
  

  • 500 grams cremini mushrooms chopped
  • 2 tbs. ghee
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 3 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • 2 tsp. fresh thyme
  • 1/2 tsp. dried thyme
  • 1 tbs. Nutridom Canada's Chaga Powder

Method
 

  1. In a large sauce pan, heat the ghee on medium heat.
  2. Add the mushrooms, onions and garlic and cook for 5 minutes until soft.
  3. Next add in the broth, coconut milk, Chaga powder and spices. Whisk while the soup is simmering.
  4. Let simmer for 15 minutes to soften the mushrooms and enjoy.
