Chicken & Sweet Potato Casserole

Ingredients
  

  • 4 cups cooked chicken shredded
  • 4 cups broccoli chopped
  • 1 large sweet potato thinly sliced
  • 1 small onion diced
  • 3 cloves of garlic minced
  • 1 cup chicken bone broth
  • 1 can full-fat coconut milk
  • 1/4 cup cassava flour
  • 1 tbs. ghee or coconut oil
  • 3 tbs. nutritional yeast
  • 1 dropper full Nutridom Canada Ginseng
  • salt & pepper

Instructions
 

  • Preheat the oven to 425 degrees. 
  • In a medium-sized casserole dish, combine the shredded chicken, chopped broccoli, sliced sweet potato, minced garlic and diced onion. Ensure that the vegetables and chicken are evenly distributed.
  • Next, pour the chicken broth and coconut milk over the mixture. 
  • Add in the cassava flour, ghee, nutritional yeast, salt, pepper and ginseng. Mix well.
  •  Cover with foil and bake for 40 minutes.
