Chicken & Sweet Potato Casserole

Ingredients
  

  • 4 cups cooked chicken shredded
  • 4 cups broccoli chopped
  • 1 large sweet potato thinly sliced
  • 1 small onion diced
  • 3 cloves of garlic minced
  • 1 cup chicken bone broth
  • 1 can full-fat coconut milk
  • 1/4 cup cassava flour
  • 1 tbs. ghee or coconut oil
  • 3 tbs. nutritional yeast
  • 1 dropper full Nutridom Canada Ginseng
  • salt & pepper

Method
 

  1. Preheat the oven to 425 degrees. 
  2. In a medium-sized casserole dish, combine the shredded chicken, chopped broccoli, sliced sweet potato, minced garlic and diced onion. Ensure that the vegetables and chicken are evenly distributed.
  3. Next, pour the chicken broth and coconut milk over the mixture. 
  4. Add in the cassava flour, ghee, nutritional yeast, salt, pepper and ginseng. Mix well.
  5.  Cover with foil and bake for 40 minutes.
