Grain-free Falafels

Ingredients
  

Falafels
  • 1 sweet potato peeled and diced
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 cup cassava flour
  • 2 tbs. tapioca flour
  • 2 tbs. coconut flour
  • 1 egg
  • 1/2 tsp. coriander powder
  • 1 tsp. cumin powder
  • 1/4 tsp. turmeric powder
  • 1 scoop Nutridom Canada Marine Collagen
  • 1/4 cup fresh parsley finely chopped
  • salt & pepper to taste
Tahini Dressing
  • 1/4 cup tahini
  • 1 garlic clove minced
  • 1/2 lemon juiced
  • 2 tbs. coconut aminos
  • 1 tbs. fresh parsley chopped
  • 3 tbs. filtered water to thin
  • 1/4 tsp. cumin
  • salt and pepper to taste
Optional Bowl Ingredients
  • Rice, tomatoes, red onion, parsley, cucumber

Method
 

Falafels
  1. Preheat the oven to 400 degrees.
  2. In a medium sauce-pan on medium heat, add the garlic with some oil and light toast until golden. Approx. 1-2 minutes.
  3. Wash, peel and dice the sweet potato. Chop the onion and add both to a food processor or high-speed blender. Pulse until well combined.
  4. Add the garlic, cassava, tapioca, coconut flour, egg, coriander, cumin, turmeric, collagen, salt and pepper. Pulse until well combined.
  5. Pour the contents into a medium-sized mixing bowl. Fold in the parsley.
  6. Roll the dough into balls, approx. 1-2 tbs. in size.
  7. Place on a lined baking sheet and bake in the oven for 40 minutes. Flip halfway through.
Tahini Dressing
  1. Combine all ingredients together in a bowl and drizzle on the falafels.
