Instructions
Dressing
Combine dressing ingredients in a high-speed blender until smooth. Store in a glass mason jar with a lid for up to 7 days.
Salad
In a large bowl or plate, add the mixed greens, pineapple, avocado, red onion, blueberries, and pumpkin seeds.
Follow the instructions for the grilled chicken linked above. Once cooked, slice and place on top of the salad.
Top with chopped fresh basil.
Drizzle with as much dressing as desired.
