Grilled Chicken & Pineapple Salad

Ingredients
  

Citrus Dressing

  • 3/4 cup fresh orange juice no added sugar
  • 1/4 cup fresh lemon juice no added sugar
  • 2 tbs. coconut milk
  • 1/4 cup fresh parsley
  • 3/4 cup olive oil
  • 1 tbs. apple cider vinegar
  • pinch of sea salt
  • 3 droppers of Nutridom Canada's Liquid Ginseng
  • 1 scoop Nutridom Canada's Marine Collagen

Salad

  • 4 slices fresh pineapple
  • 1 avocado sliced
  • 1/4 red onion sliced
  • 1/2 cup raw pumpkin seeds
  • 1 cup fresh blueberries
  • 6 cups mixed greens
  • 4 large marinated chicken breasts See link above for basil marinade.
  • 1/2 cup fresh basil chopped

Instructions
 

Dressing

  • Combine dressing ingredients in a high-speed blender until smooth. Store in a glass mason jar with a lid for up to 7 days.

Salad

  • In a large bowl or plate, add the mixed greens, pineapple, avocado, red onion, blueberries, and pumpkin seeds.
  • Follow the instructions for the grilled chicken linked above. Once cooked, slice and place on top of the salad.
  • Top with chopped fresh basil.
  • Drizzle with as much dressing as desired.
