Grilled Chicken & Pineapple Salad

Ingredients
  

Citrus Dressing
  • 3/4 cup fresh orange juice no added sugar
  • 1/4 cup fresh lemon juice no added sugar
  • 2 tbs. coconut milk
  • 1/4 cup fresh parsley
  • 3/4 cup olive oil
  • 1 tbs. apple cider vinegar
  • pinch of sea salt
  • 3 droppers of Nutridom Canada's Liquid Ginseng
  • 1 scoop Nutridom Canada's Marine Collagen
Salad
  • 4 slices fresh pineapple
  • 1 avocado sliced
  • 1/4 red onion sliced
  • 1/2 cup raw pumpkin seeds
  • 1 cup fresh blueberries
  • 6 cups mixed greens
  • 4 large marinated chicken breasts See link above for basil marinade.
  • 1/2 cup fresh basil chopped

Method
 

Dressing
  1. Combine dressing ingredients in a high-speed blender until smooth. Store in a glass mason jar with a lid for up to 7 days.
Salad
  1. In a large bowl or plate, add the mixed greens, pineapple, avocado, red onion, blueberries, and pumpkin seeds.
  2. Follow the instructions for the grilled chicken linked above. Once cooked, slice and place on top of the salad.
  3. Top with chopped fresh basil.
  4. Drizzle with as much dressing as desired.
