Peaches & Cream Muffins

Ingredients
  

  • 1 1/2 cup cassava flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. sea salt
  • 3 eggs
  • 1/3 cup unsweetened apple sauce
  • 1/2 cup coconut milk
  • 1/2 cup maple syrup
  • 2 tbs. ghee, butter or coconut oil melted
  • 1 tsp. ceylon cinnamon
  • 1 scoop Nutridom Canada Marine Collagen
  • 3 droppers Nutridom Canada Liquid Ginseng
  • 1/2 tsp. vanilla
  • 2 peaches chopped

Glaze & Topping

  • 3 tbs. coconut butter
  • 5 tbs. coconut milk (full-fat)
  • 1/2 tsp. vanilla
  • 1 tbs. maple syrup
  • 1 peach sliced

Instructions
 

  • Line a muffin tin with paper. Preheat oven to 350.
  • In a large bowl, whisk together the wet ingredients. In a separate bowl, whisk dry ingredients. Combine well. Then add in the chopped peaches.
  • Pour into lined muffin tin. Bake for 25 minutes.

Drizzle

  • In a small sauce pan, combine the ingredients together except the peaches on medium heat. Stir to prevent sticking. Remove from the heat after a couple of minutes.
  • Place the sliced peaches on the top of the muffins and then drizzle with the cream sauce.
