Roasted Beets

Ingredients
  

  • 6 beets
  • 2 Tbs. avocado oil
  • 1/2 tsp. sea salt

Method
 

  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.
  2. Rinse, then scrub the beets with a brush or remove the outer layer with a vegetable peeler.
  3. On a cutting board, use a sharp knife to remove the root ends and then slice each beet into ½” cubes.
  4. Transfer cubes to a large mixing bowl and toss with oil, then salt.
  5. Spread the beet cubes in an evenly-spaced layer on the prepared baking sheet.
  6. Bake for 45-60 minutes or until cubes are slightly crisp around the edges and tender in the middle.
