Roasted Potatoes with Garlic Scapes

Ingredients
  

  • 3 lbs. red potatoes diced
  • 2 Tbs. avocado oil
  • 1/2 tsp. sea salt
  • 2 tbs. coconut aminos
  • 1 tbs. dried parsley
  • 10 garlic scapes chopped
  • 1 cup white onion thinly sliced
  • 1 tbs. ghee or coconut oil

Instructions
 

  • Preheat the oven to 400 degrees.
  • Line a baking sheet and place the diced red potatoes on it.
  • Add the avocado oil, salt, coconut aminos and parsley. Mix well. Place in the oven and bake for 40 minutes.
  • While the potatoes are cooking, prepare the garlic scapes. In a medium-sized pan on medium heat, add in the chopped garlic scapes with the ghee. Cook for 5 minutes and then add in the onion. Cook for an additional 5 minutes.
  • Once the potatoes are cooked through, add in the garlic scape mixture and enjoy.
