Preheat the oven to 400 degrees.
Line a baking sheet and place the diced red potatoes on it.
Add the avocado oil, salt, coconut aminos and parsley. Mix well. Place in the oven and bake for 40 minutes.
While the potatoes are cooking, prepare the garlic scapes. In a medium-sized pan on medium heat, add in the chopped garlic scapes with the ghee. Cook for 5 minutes and then add in the onion. Cook for an additional 5 minutes.
Once the potatoes are cooked through, add in the garlic scape mixture and enjoy.
