Sweet Potato Breakfast Hash

Ingredients
  

  • 3 cups sweet potato shredded or diced
  • 2 cups brussels sprouts shredded or finely chopped
  • 1/2 red onion sliced
  • 1 garlic clove minced
  • 1/2 tsp. sea salt
  • 1/2 tsp. paprika
  • 1/2 tsp. cumin
  • oil for frying

Topping

  • 4 eggs poached or fried
  • 1 green onion chopped

Optional

  • 1 apple chopped and peeled
  • 1 package gluten-free turkey sausage or ground turkey

Instructions
 

  • In a large frying pan on medium-high heat, cook the sweet potatoes, brussels sprouts, red onion, garlic and spices. Cook for 10 minutes or until the vegetables are soft. *Make sure the vegetables are thin so they can cook properly. You may want to use a food processor or you can bake them in the oven instead.
  • Cook your eggs and place on top of the hash. Add the green onions to the dish and enjoy!
  • Feel free to add apple, turkey sausage or ground turkey to the recipe!
