In a highspeed blender, combine all of the ingredients except the chicken thighs. Blend for a minute until smooth.
In a medium bowl, pour the sauce over the chicken thighs until well coated.
Place the chicken into the air fryer and cook at 200 degrees for 20 minutes on each side. *This may vary depending on the machine you have. Alternatively, you can bake the chicken thighs at 350 degrees for 30 minutes and then broil for 5 minutes to crisp them up.
Once the chicken has cooked, serve on rice or cauliflower rice with a side of vegetables.
