Potato salad is a staple at our picnics, barbecues, and other summer parties. This dill potato salad includes fresh dill and apple cider vinegar, which adds a bright and fresh flavour.Â

If you are looking for a paleo option, simply swap the potatoes for one head of steamed cauliflower instead!

Potato Salad
Ingredients
- 4 large potatoes
- 4 radishes sliced
- 3 hard-boiled eggs chopped
- 2-3 large pickles cliced
- 1 tbs. dijon mustard
- 1 tbs. apple cider vinegar or pickle juice
- 1/2 tsp. paprika
- 1/2 cup Chosen Foods Mayo
- 2 tsp. dill
- 1/2 tsp. sea salt
- pepper to taste
Instructions
- Peel and boil the potatoes until they are soft. Remove from the water and let cool.
- Chop the potatoes. Combine all ingredients together in a large bowl.
