Apple Cinnamon Muffins

These Cinnamon Apple muffins are full of fresh apples and warm spices. Apple muffins are an easy-to-make, freezer-friendly, winter breakfast everyone will love!

Apple Cinnamon Muffin

Servings: 12 muffins

Ingredients
  

  • 2 1/2 cups almond flour
  • 1/2 cup arrowroot flour
  • 1/4 tsp. sea salt
  • 2 tbs. cinnamon
  • 1/8 tsp. ginger powder
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground cloves
  • 1 scoop Nutridom Canada's Marine Collagen
  • 2 eggs room temp.
  • 1/2 cup maple syrup
  • 1/2 tsp. vanilla extract
  • 3 drops Nutridom Canada's chaga
  • 1 cup granny smith apples chopped, skin peeled

Method
 

  1. Preheat the oven to 350°F. Line a muffin pan with 12 muffin liners.
  2. In a medium bowl, mix the dry ingredients and set aside.
  3. In a large bowl, mix the eggs, maple syrup, vanilla and Chaga.
  4. Add the dry mix to the wet and mix well.
  5. Fold in the chopped apples.
  6. Pour the batter evenly into the liners. Bake for 20 minutes.
