Preheat the oven to 350°F. Line a muffin pan with 12 muffin liners.
In a medium bowl, mix the dry ingredients and set aside.
In a large bowl, mix the eggs, maple syrup, vanilla and Chaga.
Add the dry mix to the wet and mix well.
Fold in the chopped apples.
Pour the batter evenly into the liners. Bake for 20 minutes.
