Basil Grilled Chicken – Paleo & Whole 30

Grilled chicken breasts can sometimes be such a bore if they aren’t seasoned or cooked correctly. All too often they’re dried out or rubbery. But when soaked in a super-quick and delicious marinade – with coconut aminos, balsamic and dried herbs – you’re guaranteed deliciousness.

This is my family’s new summer favourite and I love how easy it is to put together!

Basil Chicken Marinade

Ingredients
  

  • 4 large chicken breast boneless, skinless
  • 1/4 cup coconut aminos
  • 1/4 cup balsamic vinegar
  • 1/2 tsp. dried oregano
  • 1/2 tsp. sea salt
  • 1/2 tsp. dried basil
Garnish
  • 1/3 cup fresh basil chopped

Method
 

  1. In a large dish, combine the chicken and the marinade ingredients.
  2. Keep in the fridge overnight or for at least an hour.
  3. Turn your grill on to medium heat.
  4. Place the chicken breasts onto the grill. Add the remaining marinade on top of the chicken 1 tbs. at a time as it cooks to take on more flavour.
  5. Cook the chicken 6 minutes per side or until no longer pink.
  6. Slice and top with the fresh basil.
