Basil Grilled Chicken – Paleo & Whole 30

Grilled chicken breasts can sometimes be such a bore if they aren’t seasoned or cooked correctly. All too often they’re dried out or rubbery. But when soaked in a super-quick and delicious marinade – with coconut aminos, balsamic and dried herbs – you’re guaranteed deliciousness.

This is my family’s new summer favourite and I love how easy it is to put together!

Basil Chicken Marinade

Ingredients
  

  • 4 large chicken breast boneless, skinless
  • 1/4 cup coconut aminos
  • 1/4 cup balsamic vinegar
  • 1/2 tsp. dried oregano
  • 1/2 tsp. sea salt
  • 1/2 tsp. dried basil

Garnish

  • 1/3 cup fresh basil chopped

Instructions
 

  • In a large dish, combine the chicken and the marinade ingredients.
  • Keep in the fridge overnight or for at least an hour.
  • Turn your grill on to medium heat.
  • Place the chicken breasts onto the grill. Add the remaining marinade on top of the chicken 1 tbs. at a time as it cooks to take on more flavour.
  • Cook the chicken 6 minutes per side or until no longer pink.
  • Slice and top with the fresh basil.
