Cinnamon Roll Muffin – Gluten-free/Paleo

Cinnamon Roll Muffins – Gluten-free Paleo

Ingredients
  

Muffin

  • 5 eggs
  • 1 cup apple sauce unsweetened
  • 1/2 cup coconut flour
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • 1/4 cup coconut oil room temp.
  • 4 Medjool dates (or 2 Tbs. honey or monk fruit sweetener)

Topping and Filling

  • 2 Tbs. cinnamon
  • 1 1/2 Tbs. coconut oil room temp.
  • 2 Tbs. monk fruit sweetener or coconut sugar
  • 1 Tbs. coconut flour
  • 1/2 tsp. coconut oil melted

Glaze

  • 2 Tbs. full-fat coconut milk
  • 1/2 tsp. vanilla

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a medium-sized bowl, combine all of the muffin ingredients together. If you are using dates instead of honey, you will need to soak the dates in hot water for 10 minutes. Then place the dates and the apple sauce in the blender. Combine with the rest of the batter. Set the batter aside.
  • In a small bowl, combine all of the filling ingredients with the exception of the melted coconut oil. Once combined, reserve 1 tsp. of the mixture and set in a small dish.
  • Line a muffin tin with wrappers. Fill halfway with the muffin batter.
  • Next, add in the filling to the muffins. You will want to add around the size of a marble to the centre of the muffins.
  • Add the rest of the muffin batter to the liners.
  • Next, add the melted coconut oil to the 1 tsp. of filling that was set aside.
  • Drizzle it on top of the muffins. Use a toothpick or fork to swirl it around.
  • Bake in the oven for 20-25 minutes.
  • Let the muffins cool.
  • Then combine the coconut milk and vanilla together.
  • Drizzle on top of the muffins and enjoy!
