Dark Chocolate Donuts with Toasted Coconut

I am obsessed with these rich chocolate coconut donuts. These guys are also gluten & grain-free too!

This is 100% a recipe I will be making over, and over, and over again! If you’re a lover of rich, gooey chocolate cake, and have a soft spot for a hint of coconut, I think you’re going to LOVE these!

I was so excited when I received a gift of date sugar from LIVA. Date sugar has some pretty great benefits to it too!

Date sugar is low glycemic, good for gut health and balancing blood sugar (to fight cravings). It also contains Vitamin K, E, C, A, B6, 12, selenium, copper, protein, iron, zinc, phosphorus, calcium, potassium, magnesium, omega 3 & 6. To top it off, it is also high in fibre!

Dark Chocolate Donuts with Toasted Coconut

Servings 12 donuts

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup cacao powder or cocoa powder
  • 1/4 cup coconut flour
  • 1 tsp. baking soda
  • 1/4 tsp. sea salt
  • 2/3 cup LIVA date sugar
  • 1/2 cup unsweetened apple sauce
  • 1/3 cup coconut oil melted
  • 1/4 cup coconut milk
  • 4 eggs
  • 1 tsp. vanilla

Toppings

  • 4 oz. dark chocolate melted (for dipping)
  • 1 cup unsweetened coconut flakes toasted

Instructions
 

  • Preheat the oven to 350 F.
  • In a medium bowl, combine the dry ingredients together with the exception of the date sugar.
  • In a second bowl, combine the wet ingredients together along with the date sugar.
  • Combine the wet into the dry bowl.
  • Toast the coconut flakes.
  • Grease two donut pans with coconut oil.
  • Scoop the batter into the pans.
  • Bake in the oven for approximately 15 minutes. Use a toothpick to check that they are cooked through.
  • Leave out to cool completely.
  • Once cooled, carefully remove them from the pan and dip them into the melted chocolate.
  • Dip the donuts into the coconut flakes and let the chocolate harden.

Notes

*It is best to add the date sugar to the wet ingredients for added moisture.
