Dill Potato Salad

Dill Potato Salad makes a fantastic and easy to make side dish for your next barbecue. Potatoes, radish, pickles are coated in a creamy and flavourful dill dressing.

Potato salad is a staple at our picnics, barbecues, and other summer parties. This dill potato salad includes fresh dill and apple cider vinegar, which adds a bright and fresh flavour. 

You’ll love this recipe because it’s easy to make and includes easy to find ingredients. It’s simple but full of flavour!

If you are looking for a paleo option, simply swap the potatoes for one head of steamed cauliflower instead!

Potato Salad

Ingredients
  

  • 4 large potatoes
  • 4 radishes sliced
  • 3 hard-boiled eggs chopped
  • 2-3 large pickles cliced
  • 1 tbs. dijon mustard
  • 1 tbs. apple cider vinegar or pickle juice
  • 1/2 tsp. paprika
  • 1/2 cup Chosen Foods Mayo
  • 2 tsp. dill
  • 1/2 tsp. sea salt
  • pepper to taste

Instructions
 

  • Peel and boil the potatoes until they are soft. Remove from the water and let cool.
  • Chop the potatoes. Combine all ingredients together in a large bowl.
