These are so incredibly tasty!!
These go best with the coconut flour wraps.
Chicken Fajita Recipe:
Ingredients:
3 chicken breasts, skin removed and sliced
2 bell peppers, sliced
1/2 onion, sliced
2 T avocado oil
1 tsp. cumin
1 tsp. chilli powder
1 tsp. garlic powder
1/2 tsp. sea salt
Juice of 1 lime
Gluten free wraps like Unbun.
Directions:
In a large bowl, combine lime juice, oil, garlic, cumin, salt, chilli and mix together. Add the chicken and marinate for 30 minutes.
Heat a large pan on medium-high heat. Add a drizzle of oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, (about 8 minutes per side). Flip them a couple of times while cooking.
Transfer chicken to a plate and let rest. Add the peppers and onions to the skillet (drizzle with a little extra oil if needed), and cook until the onion and peppers are soft and cooked to your liking.
Slice chicken into strips. Serve with warmed coconut flour wraps, chopped cilantro, spinach and sliced avocado.
