I can’t take all of the credit for this delicious salad. It was actually introduced to me by my mother-in-law and I put a little bit of a spin on the recipe. This salad is a mix of sweet and salty and is perfect for the fall weather.

I had never tried golden berries before and now I am obsessed with them. They have a sweet and sour taste. I guess they are nature’s candy!


Golden Berry and Fig Salad
Ingredients
- 1/2 cup golden berries sliced in half
- 4 figs fresh or dried, sliced
- 1/4 cup raw pumpkin seeds
- 1/4 cup raw pistachios shells removed
- 1/2 cucumber sliced
- 6 cups mixed greens
- 1 pomegranate seeds
Dressing
- 1 cup olive oil
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
- 2 garlic cloves minced
- 1 Tbs. Dijon mustard
- 1/4 tsp. cumin
- 1/4 tsp. dried rosemary
- 1/2 tsp. salt
- pepper to taste
