Coconut Milk Yogurt
Ingredients
- 1 can (13oz) coconut milk
- 1 Tbs. maple syrup
- 1/2 tsp. vanilla
- 1 1/2 tsp. gelatin
- 40 billion probiotics
Instructions
- In a small sauce pan, bring the coconut milk to a simmer.
- Add in the maple syrup and vanilla.
- Turn off the heat and add in the gelatin. Whisk it very well until it has dissolved.
- Leave the mixture out until it has come to room temp.
- You may need to whisk it occasionally to prevent the gelatin from forming.
- Next, empty the contents of your probiotic capsules. It should equal 40 billion CFU.
- Combine well.
- Pour the contents into a mason jar and place a lid on it.
- Sit the jar on an electric heating pad on the lowest setting. You want it to be slightly warm not hot.
- Bundle the jar up with a towel around it to keep the contents warm.
- Let it sit for 12-24 hours.
- Next, you may notice the contents to be quite thick. Give it a quick whisk and it will become creamy. Store in the fridge.
