Radiant Pineapple Mint Smoothie

I love drinking smoothies all year round, but there is something amazing about having a tropical fruit smoothie while sitting outside in the beautiful summer weather. It almost makes me feel like I am away on vacation…not really, but I can pretend.

This smoothie recipe has many health benefits:

Coconut:

There are honestly hundreds of benefits to coconut. It is great for digestion due to it being a healthy fat. Its antimicrobial properties can help fight irritation and infection in the gut from candida. Coconut oil supports hormones because it contains specific fats that support the body’s natural hormone production.

Pineapple:

Pineapples contain many vitamins and minerals such as, Vitamin A, C, fiber, potassium, phosphorous and calcium. They are also a great anti-oxidant and fight against colds, sore throat, nausea, heart disease, and cancers. It also helps with bones strength, oral care, vision, digestion and blood pressure.

*Tip:  You will know the pineapple is ready to eat when you can pull the leaves out easily.

Mint:

Mint also has many powerful benefits like pineapple. It also helps with digestion, nausea, coughs, oral care. It also helps with headaches, respiratory disorders, mood disorders, fatigue, skincare, memory loss, seasonal allergies, and weight loss.

Radiant Pineapple Smoothie

Servings 1 smoothie

Ingredients
  

  • 1 cup coconut milk
  • 1 tsp. coconut oil
  • 1 cup pineapple diced
  • 3-4 leaves mint
  • 1 Tbs. honey
  • 1/2 orange peeled

Instructions
 

  • Put all ingredients into your blender.
  • Blend until smooth.
  • Serve chilled.

*Best consumed outside while wearing a floppy sun hat. 😉
