An easy summery side dish, garlic scapes add a mild garlic flavour to crispy roasted potatoes.
.This recipe has easily become one of our new favourites. A fun way to switch up the recipe is to use sweet potatoes or roasted cauliflower!

What are garlic scapes?
Garlic scapes—slim, serpentine flower stems—grow from the tops of hardneck garlic. Farmers have long known that removing them encourages the plant to direct its energy toward growing a plump underground bulb, but only recently has this agricultural byproduct begun to find its way to farmers’ markets and community-supported agriculture boxes, usually in late spring. They also make a delicious pesto!

Roasted Potatoes with Garlic Scapes
Ingredients
- 3 lbs. red potatoes diced
- 2 Tbs. avocado oil
- 1/2 tsp. sea salt
- 2 tbs. coconut aminos
- 1 tbs. dried parsley
- 10 garlic scapes chopped
- 1 cup white onion thinly sliced
- 1 tbs. ghee or coconut oil
Instructions
- Preheat the oven to 400 degrees.
- Line a baking sheet and place the diced red potatoes on it.
- Add the avocado oil, salt, coconut aminos and parsley. Mix well. Place in the oven and bake for 40 minutes.
- While the potatoes are cooking, prepare the garlic scapes. In a medium-sized pan on medium heat, add in the chopped garlic scapes with the ghee. Cook for 5 minutes and then add in the onion. Cook for an additional 5 minutes.
- Once the potatoes are cooked through, add in the garlic scape mixture and enjoy.
