Apple Cinnamon Pecan Treats

Ingredients
  

Base
  • 1 1/2 cup pecans
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup coconut butter
  • 3 Tbs. almond butter
  • 2 Tbs. hemp hearts
  • 1 date optional
  • 1 tsp. vanilla
  • 2 Tbs. Ceylon Cinnamon
  • pinch sea salt
Topping
  • 1/2 cup full-fat coconut milk
  • 1/2 tsp. Ceylon cinnamon
  • 1/4 cup unsweetened apple sauce
Drizzle
  • 1 Tbs. almond butter
  • 1 Tbs. coconut oil melted
  • 1/2 tsp. Ceylon cinnamon

Method
 

  1. Begin by adding all of the base ingredients into a food processor or a highspeed blender. Blend until smooth.
  2. Line a muffin tin with liners. Scoop approximately 1 tbs. of the mixture into each of the liners and press down with your fingers to flatten. Set aside.
  3. In a small bowl, combine all of the topping ingredients together. Add approximately 1 Tbs. of the mixture to each of the muffin liners and smooth out. Set aside.
  4. In another bowl, combine the ingredients for the almond drizzle. Use a small spoon to drizzle it over the cups. Place in the freezer to let set and then enjoy.
  5. Once you remove them from the freezer, let them sit on the counter for 5 minutes before eating.
