Celery and Asparagus Soup

Ingredients
  

  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 8 celery stalks chopped
  • 900ml chicken or vegetable broth
  • 1 can full-fat coconut milk
  • 10 asparagus chopped, stems removed
  • 1/2 cup hemp hearts
  • 2 cups spinach
  • salt and pepper to taste
  • avocado oil for frying and roasting

Instructions
 

  • Preheat the oven to 350.
  • In a large pot on medium heat, add the onions, garlic and celery stalks and cook to soften. Approx. 10 minutes.
  • Line a baking sheet and place the asparagus down. Drizzle avocado oil over top. Cook for 15 minutes in the oven to soften and to add flavour.
  • Next, add the broth and coconut milk to the large pot and bring to a simmer. Approx. 10 minutes.
  • Carefully pour the mixture into a highspeed blender. Add in the cooked asparagus, hemp hearts, spinach, salt and pepper. Blend until smooth
