Cinnamon Apple Plantain Crepes

Ingredients
  

Plantain Crepe
  • 1 ripe plantain
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 3 tbs. avocado oil
Filling
  • 2 apples cored, peeled and chopped
  • 1 tsp. cinnamon
  • 2 tbs. almond butter
  • 1 tbs. coconut oil
Topping
  • pecans chopped
  • coconut milk kefir
  • drizzle of honey
  • cinnamon

Method
 

  1. Preheat the oven to 350 degrees. Line a large baking sheet.
  2. In a high-speed blender, place the peeled plantain, cinnamon, vanilla and oil in and blend. The batter should resemble pancake batter.
  3. Scoop out the batter to form four equal sized circles. Smooth out if needed.
  4. Place in the oven and bake for 10 minutes. Flip the wraps and bake another 5 minutes.
  5. Remove from the oven to cool.
Filling
  1. In a large frying pan on medium-high heat, add the chopped apples, cinnamon, and coconut oil. Cook for 5-7 minutes to soften. Add the almond butter for another minute.
  2. Remove from the heat and add to the middle of each of the crepes.
  3. Roll the crepes and secure with a toothpick. Top with cinnamon, pecans, honey, and coconut milk kefir.
