Preheat the oven to 400 degrees. Line a large baking sheet.
Lay the bacon down evenly and place in the oven for 15-20 minutes. Pat dry with paper towels and then crumble the bacon with your fingers.
In a medium saucepan, sautée the minced garlic in avocado oil until lightly brown.
Combine the coconut milk, nutritional yeast, sea salt, parsley, pepper, broth, ginseng and lemon juice. Bring the sauce to a simmer and then add in the arrowroot flour and collagen. Let simmer for 10 minutes to thicken.
Cook your noodles as instructed on the package. Drain from the water. Add the cooked noodles to the sauce along with the bacon and enjoy.
