Dairy-Free Mint Pesto

Ingredients
  

  • 1/4 cup pecans toasted
  • 2 cups fresh mint stems removed
  • 1 cup fresh arugula
  • 2 green onions chopped
  • 1/2 lemon juice
  • 1/2 tsp. sea salt
  • 1/2 cup olive oil
  • 1 garlic clove

Method
 

  1. Combine all ingredients in a high-speed blender and blend until smooth.
  2. Serve with gluten-free pasta, zucchini noodles, spaghetti squash or organic meat.
