In a small sauce-pan on medium heat, add the water, gelatin and lime juice. Mix for a few minutes until well combined and no clumps are visible. Turn off the heat and let it cool.
Pour the mixture into a high-speed blender along with the cherries. Blend until smooth.
Place the mixture back into the pot and warm for a few minutes on the stove top. Turn off the heat and add in the raw honey.
Using a dropper, place the contents into a gummy mould. You can still make this recipe even if you do not have a gummy mould. Simply pour it into any container or cake pan.
Place in the fridge and let it sit for at least 30 minutes to set.
