Strawberry Rhubarb Muffins

Servings: 12 muffins

Ingredients
  

  • 5 eggs room temp.
  • 1 cup unsweetened apple sauce
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/4 cup coconut oil melted & room temp.
  • 2 tbs. honey or monk fruit sweetener
  • 1/2 cup strawberries (fresh or frozen) chopped, room temp.
  • 1/2 cup rhubarb chopped

Method
 

  1. Preheat the oven to 400 degrees.
  2. Place muffin liners in your pan.
  3. Combine all ingredients together in a medium sized bowl. Make sure there are no clumps.
  4. Pour the batter into the muffin liners.
  5. Bake in the oven for approximately 20-25 minutes.
