Strawberry Rhubarb Muffins

These muffins are loaded with fresh strawberries and rhubarb. It’s one of the best strawberry rhubarb recipes when the season comes around.

Strawberry Rhubarb Muffins

Servings 12 muffins

Ingredients
  

  • 5 eggs room temp.
  • 1 cup unsweetened apple sauce
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1/4 cup coconut oil melted & room temp.
  • 2 tbs. honey or monk fruit sweetener
  • 1/2 cup strawberries (fresh or frozen) chopped, room temp.
  • 1/2 cup rhubarb chopped

Instructions
 

  • Preheat the oven to 400 degrees.
  • Place muffin liners in your pan.
  • Combine all ingredients together in a medium sized bowl. Make sure there are no clumps.
  • Pour the batter into the muffin liners.
  • Bake in the oven for approximately 20-25 minutes.
