Secretly Healthy Sweet Potato Chocolate Pudding

Chocolate pudding that is actually healthy?! Say Whaaaat?!

Seriously, this recipe is so easy and delicious.

Why do I love sweet potatoes?

Sweet potatoes are high in many important nutrients. They contain a good amount of fibre as well as vitamin A, vitamin C, manganese and several other vitamins and minerals.

They are great for helping to stabilizes blood sugar. Sweet potatoes are high in antioxidants such as beta-carotene which is a powerful antioxidant that can help promote healthy vision, improve respiratory health and even protect your skin. They support the immune system since sweet potatoes contain Vitamin A which helps stimulate the production of immune cells that fight off disease and infection.

Sweet Potato Chocolate Pudding

Ingredients
  

  • 1 cup sweet potato puree
  • 1/2 cup dairy-free milk
  • 2 tbs. maple syrup optional
  • 3 tbs. cocoa powder
  • 1 tsp. vanilla extract

Instructions
 

  • Add all of the ingredients to a high-speed blender.
  • Blend on high for a couple of minutes. Use the tamper to push the ingredients down.
  • Top with pecans and unsweetened coconut flakes.
