Sweet Potato Hash with a Fried Egg

Ingredients
  

  • 1 sweet potato cubed
  • 2 Tbs. coconut oil melted
  • 2 eggs
  • 1/2 red pepper chopped
  • 1/2 onion chopped
  • sprinkle dried basil, parsley, cayenne, paprika, garlic, pepper, sea salt.

Method
 

  1. Wash and chop your sweet potato into small cubes.
  2. Place into a mixing bowl and pour melted coconut oil onto the potatoes, onions and red pepper.
  3. Coat the oil evenly and then sprinkle in your spices of basil, parsley, cayenne, paprika, garlic, sea salt and black pepper.
  4. Place on a cookie sheet and bake for approximately 25 minutes, or until the sweet potato is soft.
  5. Fry your eggs in a frying pan. Place onto of your hash, sprinkle with more seasonings if you wish and enjoy!
