Method
- Wash and chop your sweet potato into small cubes.
- Place into a mixing bowl and pour melted coconut oil onto the potatoes, onions and red pepper.
- Coat the oil evenly and then sprinkle in your spices of basil, parsley, cayenne, paprika, garlic, sea salt and black pepper.
- Place on a cookie sheet and bake for approximately 25 minutes, or until the sweet potato is soft.
- Fry your eggs in a frying pan. Place onto of your hash, sprinkle with more seasonings if you wish and enjoy!
