Sweet Potato Hash with a Fried Egg

Breakfast has to be my most favourite meal of the day.

…sweet potatoes have to be one of my favourite foods, so lets just say I love this dish!

And who says you only have to eat it for breakfast!

I never ate sweet potatoes growing up but once I started making meals for myself, sweet potatoes quickly became a staple in my diet. Sweet potatoes are so versatile you can eat them for breakfast, lunch, dinner and even dessert! (Dessert recipe to come!)

This recipe will leave you full and satisfied until your next meal.

Sweet Potato Hash with a Fried Egg

Ingredients
  

  • 1 sweet potato cubed
  • 2 Tbs. coconut oil melted
  • 2 eggs
  • 1/2 red pepper chopped
  • 1/2 onion chopped
  • sprinkle dried basil, parsley, cayenne, paprika, garlic, pepper, sea salt.

Instructions
 

  • Wash and chop your sweet potato into small cubes.
  • Place into a mixing bowl and pour melted coconut oil onto the potatoes, onions and red pepper.
  • Coat the oil evenly and then sprinkle in your spices of basil, parsley, cayenne, paprika, garlic, sea salt and black pepper.
  • Place on a cookie sheet and bake for approximately 25 minutes, or until the sweet potato is soft.
  • Fry your eggs in a frying pan. Place onto of your hash, sprinkle with more seasonings if you wish and enjoy!
