Tacos with Plantain Wraps

Servings: 4

Ingredients
  

Wraps
  • 1 ripe plantain
  • pinch salt
  • 3 tbs. avocado oil
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin
  • 1/2 tsp. dried basil
  • 1/2 tsp. onion powder
Taco Beef
  • 1 lbs. grass-fed beef
  • 1 jar Good Food For Good Taco Sauce
Toppings
  • 1 green pepper diced
  • 1 green onion chopped
  • 1 avocado sliced
  • 1 tomato sliced
  • 1 lime sliced

Method
 

Plantain Wraps
  1. Preheat the oven to 350 degrees. Line a large baking sheet.
  2. Peel the plantain and place all ingredients into a high-speed blender such as a Vitamix. Blend on high for a couple of minutes until smooth. It should resemble pancake batter.
  3. Scoop out the batter to form four equal sized circles. Smooth out if needed. Place in the oven and bake for 10 minutes. Flip the wraps and bake another 5 minutes. Remove from the oven to cool.
Beef
  1. In a large skillet on medium heat, cook the ground beef.
  2. Break the beef up so it is a crumble. Once it is no longer pink, add in the taco sauce.
  3. Place the sauce on the centres of the wraps and top with the vegetables and lime juice.
