Method
Plantain Wraps
- Preheat the oven to 350 degrees. Line a large baking sheet.
- Peel the plantain and place all ingredients into a high-speed blender such as a Vitamix. Blend on high for a couple of minutes until smooth. It should resemble pancake batter.
- Scoop out the batter to form four equal sized circles. Smooth out if needed. Place in the oven and bake for 10 minutes. Flip the wraps and bake another 5 minutes. Remove from the oven to cool.
Beef
- In a large skillet on medium heat, cook the ground beef.
- Break the beef up so it is a crumble. Once it is no longer pink, add in the taco sauce.
- Place the sauce on the centres of the wraps and top with the vegetables and lime juice.
