Beef Tacos with Plantain Wraps

These Whole30 taco plantain wraps are an awesome meal prep recipe or perfect for a paleo or gluten-free weeknight meal. It’s a great way to use up ground beef, and it’s a healthy recipe option that’s loaded with veggies that can be enjoyed with a ton of different toppings depending on what you prefer!

  2. It’s packed with a rainbow of veggies! I love a veggie-licious meal, and these tacos are an easy way to fit in more veggies. You can have a rainbow of veggies–bright bell peppers & onions, tomatoes, green chiles or jalapeños, and garlic. A finish of toppings, like avocado, cilantro, and jalapeño.
  3. It’s a well-balanced meal. Veggies and protein make a great well-balanced dinner. It’s got plenty to keep you satisfied and full while keeping things light and fresh. Plus, everyone can add their favourite taco toppings at the end, which keeps the whole table happy!

Can I use ground turkey or ground chicken instead of ground beef? Yes! It’s up to you, but just about any ground meat will work here. You can easily make your own with a food processor. Add cut-up chicken breast to a food processor fitted with a metal S-blade and pulse to grind until it’s very smooth. That’s it!

Want a vegetarian version? If you’re vegetarian, you can skip the meat and add 2 cans of drained, rinsed black beans.

Tacos with Plantain Wraps

Ingredients
  

Wraps

  • 1 ripe plantain
  • pinch salt
  • 3 tbs. avocado oil
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin
  • 1/2 tsp. dried basil
  • 1/2 tsp. onion powder

Taco Beef

  • 1 lbs. grass-fed beef
  • 1 jar Good Food For Good Taco Sauce

Toppings

  • 1 green pepper diced
  • 1 green onion chopped
  • 1 avocado sliced
  • 1 tomato sliced
  • 1 lime sliced

Instructions
 

Plantain Wraps

  • Preheat the oven to 350 degrees. Line a large baking sheet.
  • Peel the plantain and place all ingredients into a high-speed blender such as a Vitamix. Blend on high for a couple of minutes until smooth. It should resemble pancake batter.
  • Scoop out the batter to form four equal sized circles. Smooth out if needed. Place in the oven and bake for 10 minutes. Flip the wraps and bake another 5 minutes. Remove from the oven to cool.

Beef

  • In a large skillet on medium heat, cook the ground beef.
  • Break the beef up so it is a crumble. Once it is no longer pink, add in the taco sauce.
  • Place the sauce on the centres of the wraps and top with the vegetables and lime juice.
