Turkey & Butternut Squash Soup

Servings: 4

Ingredients
  

  • 1 lbs. ground turkey
  • 2 cups kale chopped and de-stemmed
  • 6 cups chicken or vegetable broth
  • 2 cups cauliflower rice or regular cooked rice
  • 1 small butternut squash roasted, skin & seeds removed, chopped
  • 1 white onion chopped
  • 6 cloves of garlic minced
  • 1/2 tsp. sea salt
  • 1 tsp. oregano dried
  • 1 tsp. cumin
  • 1 tsp. ground black pepper
  • 1/2 tsp. turmeric powder
  • 2 droppers Nutridom Canada's Ginseng Plus Liquid
  • cilantro for garnishing

Method
 

  1. In a medium-sized pot on medium-high heat, cook the ground turkey until no longer pink. Break the meat up into chunks.
  2. Add in the chopped onion and garlic and lightly cook for a few minutes.
  3. Next, add in the broth, chopped kale, cauliflower rice, butternut squash, sea salt, oregano, cumin, black pepper, turmeric and Nutridom Canada’s Ginseng Plus Liquid.
  4. Turn the heat up to allow the soup to come to a simmer. Allow the soup to simmer for 20 minutes. Add additional water if needed and top with cilantro.
