Turkey & Butternut Squash SOup (Gluten-Free, Paleo Option)

This incredibly flavourful ground turkey and butternut squash soup featuring delicious herbs and spices is a wonderfully warm and hearty dinner option! This soup checks all of those boxes and more – it’s really hearty and filling thanks to the butternut squash chunks and ground turkey. Plus, the addition of rice (or cauliflower rice) thickens the soup to make it even more “stick to your ribs.” Finally, this soup is simple to make with only a few basic steps!

Turkey & Butternut Squash Soup

Ingredients
  

  • 1 lbs. ground turkey
  • 2 cups kale chopped and de-stemmed
  • 6 cups chicken or vegetable broth
  • 2 cups cauliflower rice or regular cooked rice
  • 1 small butternut squash roasted, skin & seeds removed, chopped
  • 1 white onion chopped
  • 6 cloves of garlic minced
  • 1/2 tsp. sea salt
  • 1 tsp. oregano dried
  • 1 tsp. cumin
  • 1 tsp. ground black pepper
  • 1/2 tsp. turmeric powder
  • 2 droppers Nutridom Canada's Ginseng Plus Liquid
  • cilantro for garnishing

Instructions
 

  • In a medium-sized pot on medium-high heat, cook the ground turkey until no longer pink. Break the meat up into chunks.
  • Add in the chopped onion and garlic and lightly cook for a few minutes.
  • Next, add in the broth, chopped kale, cauliflower rice, butternut squash, sea salt, oregano, cumin, black pepper, turmeric and Nutridom Canada’s Ginseng Plus Liquid.
  • Turn the heat up to allow the soup to come to a simmer. Allow the soup to simmer for 20 minutes. Add additional water if needed and top with cilantro.
