Method
- Heat your grill to medium heat. While it is preheating, prepare the chicken marinade. Combine all ingredients into a large bowl and mix well to ensure everything is evenly coated.
- Lay the chicken pieces on the grill and close the lid. Grill for 8 minutes on each side or until no longer pink.
- While the chicken is cooking, prepare the salad. Combine the mixed greens to the mint and lay the lemon wedges on the side (for drizzling at the end).
- Next, prepare the Tzatziki sauce. Combine the mayo to the mint in a small bowl. Assemble your salad with the greens as the base. Then add the chicken and top with the Tzatziki sauce.
