Almond Stuffed Medjool Dates

Nature’s candy…Medjool dates! These stuffed dates are forever a favourite!

The variety of dates called Medjool are the best – they’re big, chewy, sticky, sweet and kind of toffee-like.

Packed full of vitamins, minerals and fibre, dates are a great alternative for sweet treats.

They are great for:

Relieving constipation
Quick energy boost for that 3 p.m. slump.
Source of calcium and phosphorus which is great for those who don’t tolerate dairy!

Almond Stuffed Medjool Dates

Servings: 15

Ingredients
  

  • 15 medjool dates opened at one side, pits removed
  • 1/2 cup almond butter
  • 1/4 cup unsweetened coconut flakes
  • 15 raw almonds

Method
 

  1. Cut your medjool dates on one side. Remove the pit.
  2. Scoop almond butter into each of the dates.
  3. Sprinkle coconut flakes on top.
  4. Top the dates with one whole almond each for added crunch.
