First Birthday Cake

Yesterday we celebrated our little boy’s first birthday. It was an emotional day. How did the year go by so fast?

The past year has truly been life-changing.

Having a baby has changed me.
It has changed me for the better.
It has changed my perspective on life.
Time is much more precious than before.
The things that bothered me in life, don’t anymore.
It has pushed me to be a better person.
To continue learning.
To be a good role model for him.
To have good family relationships.
To remove the relationships that do not serve me anymore.
To strengthen relationships that needed strengthening.
To love my self, so I can love him and others.
Having a baby, my baby, was the best thing that has ever happened. ♥️

My little guy is the reason I started my nutrition business. It’s crazy how one person can change your whole perspective on life and give you the courage to take the leap of faith and pursue your passion.

So now that I have had a chance to get all of my emotions out, let’s eat some cake!

I am pretty particular when it comes to the food I give my little guy but I wanted him to be able to enjoy cake on his birthday!

He has never had refined-sugar and I wanted to keep it that way. I created a cake sweetened with homemade apple sauce and dates. He absolutely loved this cake and I didn’t feel worried about harmful ingredients.

Here is the crunchy mama’s first birthday cake!

First Birthday Cake

Ingredients
  

  • 1 cup coconut flour
  • 8 eggs
  • 2/3 cups coconut oil melted
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. salt
  • 1 cup unsweetened apple sauce
  • 1 cup dates soaked in hot water
  • 1/3 cup date water

Icing

  • 1 can full-fat coconut milk
  • 1 cup coconut butter

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place parchment paper in the bottoms of two 8 " circular cake pans. Rub coconut oil on the sides of the pans to prevent sticking.
  • In a mixer, combine coconut flour to sea salt together.
  • Place dates in a bowl and cover with hot water for 5 minutes to soften them up. Keep the water for later.
  • Once soft, remove them from the water and add them to a highspeed blender along with the apple sauce.
  • Once the sauce is smooth, add it to the mixer along with 1/3 cup of the date water.
  • Pour the batter into two 8" cake pans. Place in the oven for 25-30 minutes. If you are making cupcakes, they will take less time, approx. 20 minutes.
  • Remove from the oven and let cool.

Icing

  • Place coconut milk in the fridge for a few hours or overnight to help thicken.
  • Remove the contents from the can and place it into a mixer with coconut butter.
  • Whip until smooth.
  • You can add honey or maple syrup to the icing although I kept it unsweetened.
