Grain-free bruschetta Pizza

Everything you love about sweet, garlicky, and herbaceous bruschetta scattered over a grain-free pizza crust. Throwing bruschetta and pizza into one delicious bite seemed like a fun idea. And let me tell you—it’s fabulous.

The warm grain-free pizza crust is baked and then rubbed with garlic before being sliced and topped with a refreshingly simple mix of diced tomatoes, minced garlic and chopped basil. Finish it all off with a drizzle of sweet and tangy balsamic syrup and then tell me you don’t wish you could bottle the aroma wafting from your kitchen.

Quick Tip:

When you make the bruschetta ahead of time it gets to sit and marinate. I love it when it’s first made too but it’s even better when it’s able to sit for a bit in the fridge that’s why I make it at the beginning of the week usually. The rest is just as easy.

Homemade Balsamic Reduction:

Want to make homemade balsamic reduction? Start with 1 cup of balsamic vinegar and add it in a saucepan and bring it to a boil. Then reduce the heat and simmer for 10-15 minutes or until reduced by half. No stirring necessary. The balsamic reduction should be sweet and syrupy and ready to be drizzled over the pizza. Give the tomatoes a good drizzle of balsamic and sprinkling of basil and you’re done!

Grain-free bruschetta pizza

Servings: 2 pizzas

Ingredients
  

  • 8 tomatoes diced
  • 1 small onion chopped finely
  • 3 tbs. olive oil
  • 1/2 tsp. sea salt
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 20 fresh basil leaves chopped
  • 2 garlic cloves minced
  • 1/4 cup olive oil
  • 1/4 cup balsamic reduction
  • 2 Unbun Foods Pizza Crust or other gluten-free pizza

Method
 

  1. Preheat the oven to 375. Place the pizza crusts on a baking sheet and bake for 10 minutes.
  2. In a medium-sized bowl, combine tomatoes, onions, olive oil, garlic power, sea salt, oregano and basil. Set aside.
  3. In a small sauce-pan on medium-heat, add 1/4 cup olive oil with the minced garlic cloves. Lightly cook for 5 minutes.
  4. Remove the pizzas from the oven. Evenly spread the garlic and olive oil mixture onto the crusts.
  5. Next, top with bruschetta. Place back into the oven for another 10 minutes to warm.
  6. Drizzle with balsamic reduction.
