This is THE perfect summer wrap. It holds a perfectly grilled basil chicken breast with sweet peaches, creamy avocado, crunchy pecans, drizzled with a balsamic reduction.
Of course, I can’t forget to mention the incredible soft grain-free tortillas (Untortillas) from Unbun Foods. Yes, that’s right. A grain-free tortilla that holds everything together so perfectly!
These easy, grilled chicken wraps with peaches and balsamic are such a simple and healthy lunch recipe, but they’re delicious any time of day.

Why do I love the ingredients in the Untortilla?
Psyllium husk: Psyllium Husk is an amazing herb that is both gluten-free and vegan. It is mainly used for supporting digestive health because of the fibre content.
Up to 19% of the North American population (about 63 million people) are not eliminating properly. Constipation is a huge issue!
Psyllium husk softens the stool which can help individuals with constipation, hemorrhoids, anal fissures and similar conditions. Along with assisting with digestive issues, it can reduce cholesterol levels, reduce blood sugar levels and can potentially aid in weight loss as it gives a sense of fullness.
Pumpkin seeds: Pumpkin seeds are loaded with valuable nutrients. A small amount of them can provide healthy fats, magnesium and zinc. Pumpkin seeds are also full of fibre and can aid in digestion. To top it off, they are a great source of antioxidants.
Coconut flour: Coconut flour is growing in popularity and is personally a favourite of mine! Coconut flour is high in fibre and healthy fats. The fibre from the coconut flour acts as a prebiotic which helps to feed the beneficial bacteria the gut. It is also gluten and grain-free. This is one of the first flours I recommend to my clients with celiac disease when they are making the switch to a gluten-free diet.
Chia seeds: Chia seeds are high in vitamins and minerals such as calcium, potassium and magnesium. One ounce of chia seeds contains nearly 11 grams of fibre which is 44% of your fibre needs for the day. The fibre in chia seeds also absorbs water and expands in the stomach which can help you feel full longer.
Flax seeds: Flax seeds are high in omega-3 fatty acids which have anti-inflammatory effects. Flax can also support healthy digestion as it reduces inflammation and protects the lining of the GI tract. The fibre can help to cleanse the waste from the colon.
Here’s what you’ll need to make these wraps:

Chef’s knife
Cutting board
Grill
Balmasic vinegar
Organic chicken breast
Coconut aminos
Tips for making chicken wraps:
- If you want to prepare this chicken wrap recipe ahead of time, hold off on assembling until ready to serve to keep the tortillas from getting soggy.
- If you don’t like basil, you can easily leave it out or replace it with fresh chives, cilantro or green onion.
Assemble your wraps.
Fill each tortilla with equal amounts of mixed greens, grilled chicken, avocado, peaches and pecans. Drizzle with the balsamic reduction. Fold in the sides and roll to create a wrap, and cut in half before serving. If you need to, secure the wraps with toothpicks to keep them together.

Grilled Chicken & Peach Wraps
Ingredients
Wraps
- 4 Unbun Untortillas
Chicken Marinade
- 2 large chicken breasts boneless skinless
- 4 Tbs. coconut aminos
- 4 Tbs. balsamic vinegar
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. sea salt
Wrap Filling
- 1 cup mixed greens
- 1 ripe peach sliced
- 1 ripe avocado sliced
- 2 tbs. pecans chopped
- 2 tbs. fresh basil chopped
- 4 tbs. balsamic reduction
Instructions
Chicken Marinade
- In a large dish, combine the chicken and the marinade ingredients. Keep in the fridge overnight or for at least an hour. Turn your grill on to medium heat. Place the chicken breasts onto the grill. Add the remaining marinade on top of the chicken 1 tbs. at a time as it cooks to take on more flavour. Cook the chicken 6 minutes per side or until no longer pink. Slice.
Wrap Filling
- Lay the Unbun Untortillas down and place a handful of mixed greens onto them. Next, add the peach, avocado, pecans, basil and balsamic reduction.
