These Peaches and Cream Muffins are the perfect sweet snack! This is such an easy recipe that taste’s just like Grandma’s peach cobbler! And the best part? They are easy to make and absolutely delicious!

Peaches & Cream Muffins
Ingredients
- 1 1/2 cup cassava flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. sea salt
- 3 eggs
- 1/3 cup unsweetened apple sauce
- 1/2 cup coconut milk
- 1/2 cup maple syrup
- 2 tbs. ghee, butter or coconut oil melted
- 1 tsp. ceylon cinnamon
- 1 scoop Nutridom Canada Marine Collagen
- 3 droppers Nutridom Canada Liquid Ginseng
- 1/2 tsp. vanilla
- 2 peaches chopped
Glaze & Topping
- 3 tbs. coconut butter
- 5 tbs. coconut milk (full-fat)
- 1/2 tsp. vanilla
- 1 tbs. maple syrup
- 1 peach sliced
Instructions
- Line a muffin tin with paper. Preheat oven to 350.
- In a large bowl, whisk together the wet ingredients. In a separate bowl, whisk dry ingredients. Combine well. Then add in the chopped peaches.
- Pour into lined muffin tin. Bake for 25 minutes.
Drizzle
- In a small sauce pan, combine the ingredients together except the peaches on medium heat. Stir to prevent sticking. Remove from the heat after a couple of minutes.
- Place the sliced peaches on the top of the muffins and then drizzle with the cream sauce.
