I really couldn’t figure out what to call this salad. Superfood salad? Everyday salad? I landed on Everyday Rainbow Salad because a. you should aim to eat a big salad every day and b. this salad is bright and colourful, just like a rainbow.
Rainbow Salad with a Tangy Dressing
Ingredients
- 4 cups mixed greens
- 1/2 large carrot peeled and sliced
- 1 green onion chopped
- 1/2 purple radish sliced
- 1/4 cup microgreens
- 1 tbs. sesame seeds
Dressing
- 3/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 Tbs. raw honey or maple syrup
- 1 Tbs. dijob mustard
- 1/2 tsp. dried basil
- 1 clove garlic minced
- salt & pepper
