Roasted Beets

Let’s have some beets!

I love beets now but I never used to.

Since I have learned how to cook them properly I now find they are delicious.

Not only do they taste great, but they have some pretty amazing benefits.

What are the benefits of beets?

  • High in antioxidants which can help against free radicals
  • Heart-healthy
  • An excellent source of nutrients like iron, potassium, folate and Vitamin C
  • Great for maintaining blood pressure
  • A way to treat anemia
  • Improves digestion
  • Aids in liver function
  • Support natural detoxification as they are high in fibre

Have You Heard of the beet test?



It is a simple way to test your transit time.

All you have to do is consume ½ raw beet and wait 12-24 hours to see if you are eliminating properly.

If it takes 24 hours or longer to see the beets, then this means you have a slow transit time otherwise known as constipation.

So have some beets, raw or cooked, it will do good for you.

I personally love to roast beets as they become sweeter and the “earthy” flavour is removed.


Here is my favourite roasted beet recipe:

Roasted Beets

Ingredients
  

  • 6 beets
  • 2 Tbs. avocado oil
  • 1/2 tsp. sea salt

Instructions
 

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • Rinse, then scrub the beets with a brush or remove the outer layer with a vegetable peeler.
  • On a cutting board, use a sharp knife to remove the root ends and then slice each beet into ½” cubes.
  • Transfer cubes to a large mixing bowl and toss with oil, then salt.
  • Spread the beet cubes in an evenly-spaced layer on the prepared baking sheet.
  • Bake for 45-60 minutes or until cubes are slightly crisp around the edges and tender in the middle.

Now go eat some beets!
