Strawberry Rhubarb Muffins
Ingredients
- 5 eggs room temp.
- 1 cup unsweetened apple sauce
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- 1/4 cup coconut oil melted & room temp.
- 2 tbs. honey or monk fruit sweetener
- 1/2 cup strawberries (fresh or frozen) chopped, room temp.
- 1/2 cup rhubarb chopped
Instructions
- Preheat the oven to 400 degrees.
- Place muffin liners in your pan.
- Combine all ingredients together in a medium sized bowl. Make sure there are no clumps.
- Pour the batter into the muffin liners.
- Bake in the oven for approximately 20-25 minutes.
