Chia seeds are wonderful and can be used is so many different ways. One way that I love to eat them, is in a pudding.
Chia seeds are naturally gluten and grain-free so there is no need to worry if you have Celiac, sensitive to gluten or following the Paleo lifestyle.
In just one tablespoon, chia seeds have five times the amount of calcium than a glass of milk, more Omega-3s than salmon, twice the potassium than a banana, three times the iron than spinach, and more antioxidants than blueberries. These little seeds are powerful and give you a great deal of energy without keeping you up at night. They are perfect for weight loss as they absorb liquid, bulk in size and make you feel full.
Chia seeds are very high in dietary fibre, making it great for digestion and healing digestion issues. It is great for diabetics as it has a positive impact balancing blood glucose levels
And the list goes on!
- Other ways to use them:
- Put in your smoothies
- Sprinkle on your salad or cereal
- Mix in with yogurt
- Use as an egg substitute in baking (1 tbs. chia seeds mixed with 3 tbs. water)
- Thicken soups
Vanilla Chia Pudding Parfait
Ingredients
- 1/3 cup chia seeds
- 2 Tbs. maple syrup or honey
- 1 tsp. vanilla
- 1 1/2 cup almond milk
- fresh fruit or nuts toppings
A variation to the recipe:
- 2 Tbs. cocoa powder
- dash cinnamon and nutmeg
Instructions
- Place all ingredients in a bowl and mix.
- Pour mixture into a glass container or cup and chill in the fridge for 30 minutes.
- Remove from the fridge and top with berries and/or nuts.
