Chocolate Hazelnut Balls

Homemade hazelnut chocolate balls made with real-food ingredients. They taste like Ferrero Rocher candies but are healthy, gluten-free as well as vegan and paleo-friendly. 

They are extremely easy to make and will be a crowd pleaser… guaranteed.

I love to make homemade almond milk and this is a great way to use up the almond pulp so there is no waste! Alternatively, you can use almond flour instead.

This recipe uses raw cacao powder as it contains many antioxidants – flavanols, it also keeps our heart healthy and has a strong anti-inflammatory effect. Cacao contains several active substances that have a positive effect on our mood.

Cacao and cocoa powder have quite a few differences. Raw cacao powder is made by cold-pressing unroasted cocoa beans, this process retains the living enzymes and removes the fat (cacao butter).

Cocoa powder looks the same however there is a BIG difference. Cocoa powder is the raw cacao that’s been roasted at high temperatures. The effect of roasting the cacao is that the molecular structure of the cocoa bean changes. It lowers the overall nutritional value and destroys the health benefits.

Chocolate Hazelnut Balls

Ingredients
  

  • 1 cup walnuts
  • 1/2 cup medjool dates
  • 3/4 cup almond pulp (or almond flour – see notes)*
  • 1/3 cup cacao powder
  • 3 tbs. hemp hearts
  • 1/4 tsp. sea salt
  • 3 tbs. almond butter
  • 1 scoop collagen optional
  • 1/2 cup hazelnuts divided

Instructions
 

  • In a small bowl, place the dates in boiling hot water and let sit for 10 minutes. Once they have soaked, drain the water. Remove the pits.
  • Place all of the ingredients except for the hazelnuts into a high speed blender like a Vitamix.
  • If your machine is having a hard time moving, add warm water to the mixture one tablespoon at a time.
  • Blend until the mixture is smooth.
  • Set aside 14 whole hazelnuts and roughly chop the rest.
  • Roll the balls with your hand and place a whole hazelnut into each. Then roll each of the balls into the chopped hazelnuts.

Notes

If you are using almond flour, you will need to add water to the mixture. Start with a small amount and gradually increase until desired consistency.
 
Store in the fridge for 5 days or you can freeze them too.
If you do not have hemp hearts, you can use unsweetened coconut flakes instead.
